Taste Notes: I'd describe the taste of this coffee more as dark chocolate and cinnamon, black. With milk, though, as flat white, cappuccino, latte etc., the flavour I'm most reminded of, is dark chocolate orange.

This coffee is from the Sierra Madre highlands of southern Mexico, bordering El Trifuno, one of the most diverse evergreen cloud forests in Mexico and an incredibly important site for bird migration. 

In fact, the Resplendent Quetzal, the amazing looking endangered bird spoken of in the description of Fruit & Nut Single Origin Guatemala from Finca Bramen farm (referred to simply as El Quetzal in this area) may well visit this area too, as they're relative neighbours, as the (brightly coloured) bird flies. 

There's a huge variety of animals in this area including endangered species such as Jaguar Puma & Margay. 

The microclimate here creates the perfect environment for high grown coffee, with high humidity, lots of natural shade & fantastic quality soil.

Tuff beans hard to grind, taste clean light crisp coffee with bright acidity to it doesn't last long I find myself doubling up on it.
